Rice Semolina can be very confusing when you come across it in local markets. It may sound like some foreign ingredient, which it really isn’t. Rice Semolina is commonly called “Suji” or “Idili Rava”. And if it still confuses you, let’s explore how it is useful in making tasty dishes of high nutritional value.
Rice Semolina or Idili rava is made from rice after undergoing the process of boiling and drying, which grounds it into fine, semolina – like powder. Rice semolina is fine and smooth in texture unlike wheat semolina which is coarse. It is majorly incorporated in batters and mixture due to its texture and its ability to form the right consistency in a mixture.
It is made from full grains of rice and is high in carbohydrates. Since rice is widely consumed in India, rice semolina is a more desired option to use over wheat semolina. Rice is high in nutritional value, rich in carbohydrates, vitamins and minerals and other essential nutrients.
Rice flour is also available gluten-free, making it a great alternative for wheat semolina. Being gluten-free, rice flour adds more value as it helps in keeping digestive tract disorders at bay, that are caused due to gluten. It is also a great option for gluten intolerant people.
Rice semolina is not only high in carbohydrates providing a power house of energy, but it also helps in the intake of several B – complex vitamins , especially folate and thiamin.
Rice semolina is also used in variety of dishes. With the quality to ferment quickly, it is widely used in the preparations of fluffy, light food items like idlis, dosas, uthhappams, etc.
