HOW TO MAKE COORG KADUMBUTTU/KADAMBUTTU (STEAMED RICE BALLS)
There are many rice specialities that can be made, but one such special dish from Coorg is Coorg Kadumbuttu. It is essentially a steamed rice ball.
One of the main ingredients in it is broken the rice.
It is super easy to make at home, all you need is some rice. You can use this to make any recipes that call for broken rice.
Preparation Time: 30 mins
Cooking Time: 5 mins
2) Rinse the rice 2-3 times.
3) Take the rinsed rice, water, salt, butter and grated coconut in a pan.
4) Cook on medium heat, stirring continuously, till the entire mixture turns mushy.
5) Switch off heat and cover the pan for 5 minutes.
6) Apply some butter in your palms, or water can work as well.
7) Take about 3/4 tablespoon of the rice mixture and form small balls.
8) Place the rolled balls on a muslin cloth, placed on a steamer.
9) Once the surface is filled, you may place a layer of muslin cloth over the balls and place the remaining balls on it.
10) Cover the top with another layer of muslin cloth.
11) Cover this with a lid and steam the balls on medium heat for 20 minutes or till done.
12) Check if the balls are cooked, you may poke with a knife. It is cooked if the knife comes out clean.
13) Serve the kadumbuttu with Chicken Curry or any accompaniment of your choice.
Summary: Broken rice is fragmented, not defective; there is nothing wrong with it. It is as nutritious as the equivalent unbroken rice (i.e. if all the germ and bran remains, it is as nutritious as brown rice; if none remains, it is only as nutritious as white rice).
Kadumbuttu: Kadumbuttu is one of the most popular dishes in Coorg. The best accompaniment for Kadumbuttu is the much famous Chicken Curry, which is a spicy, tangy, flavorful chicken curry.
Thari or coarsely ground rice is the main ingredient used to prepare the dish. If you cannot find broken raw rice at your nearby grocers, do not fret. Take any raw white rice and soak for 30 minutes or till it becomes soft. Drain the water and spread on a paper or cloth. Once the moisture has gone, you can grind them coarsely and use.
