How to make use of left-over rice?
Unlike other sources of carbohydrates, you cannot necessarily measure the amount of rice that you consume. You definitely have a rough idea but depending on the gravy or cereals that you mix with it, the quantity may increase or decrease. Also, there’s no accurate measure by which you can assume that quantity. Therefore, it is very natural that households where rice is consumed regularly (this basically includes every average Indian household), there’s always some amount of rice which stays over. What do you do with that left-over rice? In a day and age of acute food crisis, you just cannot do away with the left-over. Instead, you make use of that left-over rice for creating other tasty food items that you consume and avoid wastage of food. Let us discuss a few dishes that you can make from left-over rice.
You all have tasted rice pancakes, the Indian variant of it what we know as ‘Dosa’, also a pan-Indian favourite and a South Indian staple. Left over rice is a key ingredient in making rice pancakes. It just takes 10 minutes to cook. All you need for this is 2 medium sized bowls of cooked rice which can make up to 6-8 rice pancakes. Along with this, you need a cup of curd, a chopped onion, 2 green chillies, coriander leaves, chilli powder, salt and vegetable oil. First, in a big bowl, mix leftover rice and curd together and leave it overnight. The next morning, make a paste of it by grinding the mixture well. Then add all the other ingredients and give it a good stir. Take a scoop of the batter, pour it onto the pan and spread it around. After 30- 45 seconds, fry the other side. You pancake will be ready to eat.
Tis dish is basically an Italian recipe but variants of it are prevalent in most cultures especially in India. All you need for this is 2-3 cups of cooked rice, 1 cup of Parmesan cheese, one cup of rice flour, sweet corn, salt, chopped cilantro and vegetable oil. Mix all the ingredients together except the oil and the rice flour and then put cheese fillings in the centre and make balls. Roll each ball over the rice flour. Heat some oil in the frying pan and drop them in the oil to fry. In 15-20 minutes you will cook mouth-watering rice balls which can easily feed 4-5 people. The next time you have uninvited guests or your in-laws suddenly barge on a Sunday evening when you have been relaxing; you know what is the easiest recipe to satiate the moment and impress the taste buds.
A Bengali-favourite and equally popular in other places with different names, Panta Bhaat acts as a coolant and is best eaten during the summer. All you need for this is 4 bowls of cooked rice, salt as per taste, 2 medium-sized onions and 4-8 green chillies. Just soak cooked rice overnight in water. The following day, drain the water and eat it with some chopped onions, green chilli and salt. You can have pakoras with it also cooked with rice.
Rice pudding is one of the best rice sweet dishes that can be prepared when you have a strong sweet tooth craving. For the preparation and baking, it takes about an hour’s time. Along with leftover rice which is our primary ingredient, you need 2 eggs, milk, sugar, vanilla essence, dry fruits, nutmeg powder and cinnamon powder. Begin by mixing well all the ingredients together and pouring it into a greased baking dish. Then preheat the oven to 350 degrees and place the baking dish in the water-filled baking vessel and bake it for 45 minutes. Insert a toothpick in the middle to check if it comes out clean. If the batter sticks to it, then bake it for another 10-15 minutes. You may also bake it in the pressure cooker but without the whistle and enjoy homemade puddings.
